Hello Reader, To all my American friends enjoying tomato season, I see you. I see your gorgeous heirloom tomatoes and all your delicious tomato recipes. And yes, I am very very jealous. There is something so magical about tomato season. For most of the year, tomatoes are just... tomatoes. But for a few short months they become sweet, juicy and bursting with flavour. They're so good that they barely need anything done to them. Which is exactly why I love this tart and what I would be making if it were tomato season here. Although, I did get my hands on some beautiful heirloom tomatoes at the grocer the other day! This tart has a buttery, flaky pastry, a creamy cheddar filling and layers of beautiful heirloom tomatoes baked until just set. I finish it with a drizzle of sour cream, a little parmesan and fresh thyme, and somehow something so simple ends up looking like you ordered it from a little café in the Italian countryside. One of my biggest tips is to salt the tomatoes before they go into the tart. They'll release quite a bit of moisture, which means your pastry stays beautifully crisp instead of going soggy.
