Hello Reader, If you were up late celebrating the 4th of July, or like me, up too late with a few too many glasses of red wine waiting for gossip about Taylor Swift's wedding, today calls for exactly one thing: pastina. It's the perfect dish to make when you don't feel like cooking but need something comforting! Growing up, there was an unspoken rule in our house. Pastina had to be eaten on the couch, in the comfiest clothes you owned. My mum made it whenever we were sick, heartbroken, or just needed a reset. Italians genuinely believe a bowl of pastina can cure almost anything. It's tiny pasta cooked directly in broth with butter until it turns plump, glossy, and almost creamy, then finished with parmesan (and a whisked egg if you want it extra rich). No fancy technique, no long ingredient list, just the kind of dish that makes you feel instantly better.
