Hello Reader, When I think of potato salad, I don't think of mayonnaise. I think of my Spanish mum standing at the kitchen bench, dressing warm potatoes with good olive oil, red wine vinegar and plenty of salt while the steam still rose from the bowl. There was usually tuna, boiled eggs and parsley scattered throughout, and it would sit in the fridge until lunch where somehow it tasted even better. This is Patatas Aliñadas, a classic Spanish potato salad that I have been eating for as long as I can remember. It's incredibly simple, but that's exactly what makes it so good! The trick is to dress the potatoes while they are still warm so they soak up every drop of deliciousness. I also just shared this recipe as a full YouTube video because I wanted to show you exactly how I make it at home. There are a few little techniques that make all the difference, and I always think recipes like this are easier to learn when you can cook alongside someone.
