Hello Reader, There are very few things more comforting than a big pot of homemade soup bubbling away on the stove, and this potato and leek soup is one I come back to every winter. It's one of my favourite recipes because it feels both comforting and clever in the kitchen. The entire leek gets used, so nothing goes to waste. The tender white and pale green parts melt into the soup, while the darker green tops are crisped up until golden to create the most delicious crunchy garnish. I also love adding crispy bacon for a little extra depth and saltiness, but it's completely optional if you'd prefer to keep it vegetarian. One of the best things about this soup is that it's incredibly freezer friendly. I always recommend making a double batch because you'll thank yourself when the next cold, rainy day rolls around.
