This week we are doing something a little different.

All five recipes this week are vegetarian, freezer-friendly and genuinely some of my favourite things to cook. Whether you make one or all of them, your freezer will thank you. I also have three exclusive recipes that you can only find here!

A couple of things before you shop:

  • The Tomato & Basil Sauce is the base for both the Pasta Bake and the Eggplant Parmigiana β€” make it first and make a big batch. It's also delicious with just some pasta tossed through!
  • For the soups and stew, I love freezing portions in silicone trays so you always have an easy meal ready to go.
  • Microwave the pumpkin for a few minutes before peeling β€” the skin slips right off and saves you so much effort.

Take what works for your week, skip what doesn't and make it your own. That is always how I cook.
