✨ Easy Mideek Dinners ✨

Anchovy Butter Pasta

If you have butter, a tin of anchovies and some pasta in your kitchen, dinner is basically done. The anchovies melt completely into the butter creating a rich, silky sauce that coats every strand — deeply savoury, never fishy, and on the table in ten minutes flat.

Spanish Potato Salad (Patatas Aliñadas)

This is the potato salad I grew up eating — no mayo, no dairy, just tender potatoes dressed in good olive oil and sharp red wine vinegar while still warm, then tossed with tuna, boiled egg, capsicum and fresh parsley. Light, refreshing and honestly better the next day.!

Pasta e Piselli (Pasta with Peas)

Naples' beloved poor man's dish and honestly one of the most satisfying things I make. Everything cooks in a single pot, including the pasta. Blending a third of the peas into a silky purée gives you that creamy, velvety texture without a drop of cream. Budget-friendly, cosy and done in under 20 minutes.

Roasted Pumpkin Pasta

Pumpkin and whole garlic bulbs roasted until deeply caramelised, then simmered together with pasta and stock in the same pot until the sauce is rich, creamy and completely irresistible! And there's not a drop of cream in it. The kind of cosy one-pot dinner that tastes like it took way more effort than it did
