4 Simple One Pan Dinners I’m Making This Week

Hello Reader,

I know we all love a quick and easy dinner that doesn’t involve a lot of work and definitely doesn’t involve a lot of dishes. I tend to save my more dish-heavy recipes for the weekend.

So I wanted to share a few of my favourite one pan dinners that will get you through a busy week. And one of them is a brand new recipe that my lovely email subscribers are getting to view first! It's my caramelised fennel creamy orzo.

If you have never caramelized fennel before, then you are in for a real treat. It turns soft, sweet and slightly jammy and melts into the most beautiful, creamy sauce.

I would love to know if you make any of these recipes!

✨ One Pan Dinners ✨

This caramelized fennel orzo is one of those recipes where everything happens in the one pot so there is no extra boiling, draining or dishes. The orzo cooks right in the sauce, soaking up all that caramelized fennel, garlic and butter.

This one pan chicken and garlicky rice is everything I love in a meal. It’s made with a handful of simple ingredients, fills the house with the most comforting smell while it cooks, and gives you leftovers that can be turned into something else the next day. It’s unfussy cooking at its best, making it the perfect mid-week meal!

f you’re looking for a comforting dinner that’s bursting with flavour but still easy enough for a busy weeknight, this creamy garlic parmesan chicken is it. Juicy, golden-seared chicken is simmered in a silky sauce made with garlic confit, parmesan, sour cream and a splash of white wine.

This one pot creamy orzo pasta with cherry tomatoes is exactly the kind of quick and comforting weeknight meal I love to make. Top it with some burrata to make it extra rich and creamy!

It’s definitely not spring here in Melbourne, Australia right now. I am currently curled up on the couch with my slippers, a warm jumper and a hot cup of tea… but I feel like I’ve been living in it a little bit lately. As all my US friends enter spring, every time I open my phone my feed is filled with lovely light, green meals. And one thing I keep noticing everywhere right now? Artichokes. Which happens to be one of my absolute favourite vegetables to cook with. So if you are heading into...

There’s something about weekend cooking that just feels different. There’s no mad rush, no “what can I throw together in 20 minutes” and usually no hungry kids screaming at me because my partner is home to keep them busy… just slower, more relaxed meals that feel a little bit special, without actually being complicated. So if you’re staying in this weekend, here are 5 recipes I always come back to. They’re simple, comforting, and just have that weekend energy (so of course we needed to...

Hi Reader, It has been almost a year since I started sharing a little bit more of myself and the recipes that I truly want to make with you all. And I am not going to sit here and tell you that it has been easy because truthfully, it has been hard. Really hard. Once I stopped asking myself "will this perform?" or "will go this viral?" and started asking "is this something I want to eat and share with my family?", I began to cater to a much smaller group of people. But I kept telling myself, I...
