It’s definitely not spring here in Melbourne, Australia right now. I am currently curled up on the couch with my slippers, a warm jumper and a hot cup of tea… but I feel like I’ve been living in it a little bit lately.

As all my US friends enter spring, every time I open my phone my feed is filled with lovely light, green meals.

And one thing I keep noticing everywhere right now? Artichokes. Which happens to be one of my absolute favourite vegetables to cook with.

These steamed artichokes with garlic confit butter are decadently rich, and make a wonderfully tasty appetiser! While cooking artichokes may seem rather intimidating, they are surprisingly simple to make–especially with my cooking tips!

Why not put a new dish on the table and have a go at making my Italian breadcrumb stuffed artichokes? Their flavourful crumb topping goes perfectly with the tender artichoke.

This creamy leek risotto is simple, elegant, and packed with sweet, mellow leek flavour. It uses all parts of the leek as the tops are fried in olive oil to create the perfect crispy garnish.

This Mediterranean cherry tomato confit pasta salad is my go-to summer dish when tomatoes are sweet, juicy, and overflowing in my kitchen. The slow-roasted tomato confit brings out a rich, jammy flavour that’s tossed through pasta with a rich olive oil and anchovy dressing.
