Eggs For Dinner? Trust Me.

There are plenty of ingredients that get all the attention when it comes to dinner. Think the usual culprits... chicken, steak and salmon.

But one of the most versatile and underrated ingredients in my kitchen is the humble egg. I could fry up egg, serve it with some buttered toast and call it an evening. Total girl dinner!

Affordable, satisfying and endlessly adaptable, eggs have the remarkable ability to transform into something completely different depending on how you cook them. A creamy bowl of Turkish eggs feels worlds apart from a golden Spanish tortilla, yet they both begin with the same simple ingredient.

This week, I'm sharing five of my favourite egg based dinners. The kind of meals that are easy enough for a weeknight but still feel a little special.

✨ Recipes Featuring Eggs✨

Potato rosti

Crispy on the outside, soft in the centre, and golden all over! Potato rosti is basically a giant hash brown. While the base is humble, the topping possibilities are endless and I love serving mine with a fried egg!

Spanish baked eggs

Growing up in a Spanish household, Huevos a la Flamenca (Spanish baked eggs) was a dish that brought everyone to the table. It’s filled with classic Spanish flavours from the chorizo, pimentón (paprika), jamon, tomatoes, onion and garlic.

Sopa de Ajo

Growing up with a Spanish mum, Sopa de Ajo (or Spanish garlic soup) is such a nostalgic dish for me to eat. Made with simple pantry staples like garlic, olive oil, eggs and day-old bread, this comforting soup is extremely easy and cheap to make!

Croque Madame

Introducing the queen of all sandwiches, the Croque Madame. This decadent French sandwich is rich, golden and oozing with flavour. It’s layered with smoky ham, Gruyere cheese, a garlicky bechamel sauce and topped with a runny fried egg.

Turkish Eggs

If you’ve never tried Turkish eggs (Çılbır) before, you’re in for something truly special. This traditional Turkish recipe combines perfectly poached eggs with a garlicky yogurt base, finished with a sizzling chilli butter that’s spooned over the top.

Spanish Tortilla

Spanish tortilla is a Spanish omelette that is made with finely sliced onions and potatoes that are fried in extra virgin olive oil. It's great served warm or cold the next day!
