My strawberries & cream sponge cake 🍓


This strawberries and cream sponge cake happens to be one of my favourite desserts to make. The sponge is incredibly light and airy, but what I really love is making the homemade strawberry jam that gets layered throughout.

When strawberries are sweet and fragrant, I love turning them into a quick homemade jam and sandwiching it between layers of soft sponge cake and freshly whipped cream.

It’s the kind of dessert that works for so many occasions. Afternoon tea, a family gathering, or simply because you found yourself with a punnet of strawberries needing to go to use. And I promise you, homemade strawberry jam inside a sponge cake is one of life’s little joys.
